Heavenly Chicken

Want an easy, to die for delicious chicken dish?  Look no further!  Heavenly Chicken cooks in your crockpot and then makes an easy entree served with rice or mashed potatoes.  Or shred the chicken and serve with the sauce as a pulled chicken sandwich.  You will get loads of compliments on this dish.  An absolute must try!

  • 1.5 to 2 lbs Chicken Breasts (about 3 or 4 chicken breasts)
  • 8 oz can Tomato Sauce
  • 1/2 cup low sodium Soy Sauce (can use regular, but will make it a bit salty)
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced

 
Place the chicken breasts in the crockpot.  Mix together the tomato sauce, soy sauce, brown sugar and garlic in a small bowl.  Pour over top of chicken.  Cook on low for 6-7 hours.  Serve over brown rice or mashed potatoes.  Or shred the chicken and use for sandwiches.

Black Bean, Corn & Chicken Soup

Baby, it’s cold outside! So yesterday I whipped up this yummy soup and left it in the crockpot for the afternoon. Last night, we came home and enjoyed this spicy, thick soup with a loaf of crusty bread! Heaven, I tell you!

  • 1 Can (10 oz) mild, diced tomatoes and green chilis (I used Rotel)
  • 1 Can (15 oz) black beans, drained and rinsed
  • 10 oz Bag frozen corn
  • 2 Chicken breasts, cut into cubes
  • 8 oz Cream cheese, cut into cubes
  • 1 Leek (or 1 small onion), chopped
  • 1 Packet dry ranch dressing
  • 1 Tablespoon Cumin
  • 1 Teaspoon Chili Powder
  • 1/4 cup water

 
Combine all ingredients in crockpot and mix well.  Set crockpot on low.  After about an hour or so, stir the ingredients in the pot to mix up the melted cream cheese.  Cook 5-8 hours on low.

Pork Roast

Tonight I made this delicious pork roast!  Super easy–just made a savory rub and popped it in the oven for 50 minutes.  While it was baking, I made my famous mashed potatoes along with a side of sugar snap peas!  What a yummy dinner on a cold evening!

Pork Roast

  • 10 Cloves Garlic
  • 1 Tablespoon Oregano
  • 1/4 Teaspoon Rosemary
  • 2 Tablespoons Kosher Salt
  • 1 Teaspoon Black Pepper
  • 1/4 Cup Olive Oil
  • 2-1/2 – 3-1/2 lb Pork Roast

 

Press garlic cloves with a garlic press into a small bowl.  Add remaining seasonings and olive oil.  Mix well.  Place pork roast on pan.  Put rub on top.  Bake at 500 degrees for 50 minutes or until inner temperature is 140 degrees.
